Tacos are a staple food in our house. I like to mix it up by offering vegetarian and beef options to my family. I must admit cauliflower is my favourite. I first tried cauliflower tacos at a local Mexican restaurant and of course I needed to come home and re-create it with my own unique twist. After playing around with some different seasonings I came up with a flavour profile that I enjoy and I think you will too. As usual have fun with the ingredients, and experiment with the flavours and textures. Cauliflower tacos are so delicious and take minutes to make. I start by making my own taco seasoning.
Taco Seasoning
1 tablespoon chilli powder
1 teaspoon cumin
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
Mix and combine the seasoning together.
Now the Cauliflower part. As you can see I used a pretty big cauliflower. Chop the cauliflower into bite sized chunks.
The Cauliflower
-Wash the cauliflower
-Cut the cauliflower into bite sized pieces
-You will need 2 tablespoons of extra virgin olive oil,
-taco seasoning we made above.
Directions
Preheat oven to 400 degrees F. Add cauliflower to large baking sheet, drizzle with olive oil , add the taco seasoning. Toss to combine , and roast for about 25-30 minutes until the cauliflower is golden brown.
Serve immediately, and enjoy with your favourite toppings. I used my homemade cilantro lime dressing. You can find the recipe on my previous blog post. I find the cool dressing goes perfectly to cut the heat of the spicy cauliflower.
